Keto Bacon Mushroom Chicken

Have you ever looked at a piece of chicken breast and said to yourself, “ I literally CANNOT eat one more piece of chicken as a part of ANY meal plan?” Personally I can go through phases where if it’s chicken.. I’m running in the opposite direction. Unfortunately even though it can get SO mundane, it is still considered a healthy staple on most diet plans. So, since I've accepted the fact that it’s not going anywhere… naturally I am always on the hunt for a great chicken recipe!

The first thing I look at when I’m going to make a recipe is the number of ingredients. While I love making recipes that are intricate and involved… most of the time I’m looking for something with less than 6 ingredients and doesn’t take all day! So this recipe which I found on this amazing recipe on Stay Snatched, and it definitely meets that criteria! Let’s just jump right into the recipe!

INGREDIENTS

  • 4 chicken breasts

  • 1 tbsp olive oil

  • 3/4 cup unsweetened almond milk

  • 1 - 8 oz mushrooms

  • 1/4 cup heavy whipping cream

  • 4 garlic cloves chopped

  • 6 slices Trader Joe’s Uncured Nitrate Free Bacon cooked and crumbled

  • 1 tbsp Almond flour

  • 1 tsp butter

  • Italian Seasoning, McCormick's Grill Mates Montreal Chicken, salt and pepper

So again, this is such a simple recipe. First I seasoned the chicken and cooked the bacon. Once the bacon was cooked I crumbled and set aside for later.

The next steps were fairly simple as well. I pan seared the chicken per the instructions and made the actual sauce which consisted of mushrooms, butter, almond milk, and heavy cream. I brought these ingredients to a simmer until the sauce thickened, then for the final step, added the chicken! Next step… ENJOY!! Seriously!! LOL! Comment below and let me know what you think!
