Strawberry Sour Cream Pound Cake Cupcakes

If you’re from the south, then you know how serious people take their baked goods… especially pound cake. Ask anyone, and they will convince you that you can’t just eat anyone’s pound cake! There are so many factors that go into a good piece of pound cake…from how sweet it is, to how buttery it is, and by far the most important….how moist it is!

I was born in Atlanta, and grew up in Texas, then moved back to Atlanta as an adult, so I like to consider myself somewhat of an expert. While I do love a great piece of pound cake, I find that I equally enjoy a nice fluffy cupcake! When I got married, the one thing my husband would always ask me to make him is pound cake…regular, strawberry, Lemon… you name it… he loves all flavors!

As newlyweds we are learning that compromise is key, so I doctored up 2 of my favorite recipes… pound cake and strawberry cupcakes! Since there’s so much density packed in such a small cake, it is super important for this cupcake not to be dry. I have the BEST hack for adding moisture to even the driest cake…. sour cream! This will seriously take any of your recipes to the peak of moistness! My favorite right now is Shamrock Farms Sour Ceam, it’s mild with just a hint of sweetness and is oh SO creamy!
